Lentil pancakes rolled with smoked salmon

Ingredients:

For 4 people

4 slices of smoked salmon

150g of fresh cheese like Saint Morêt

150g of cooked and cooled green lentils from Le Puy (cook them in a large volume of unsalted water for about 20 min)

1 tablespoon of white almond puree

2 tablespoons of lemon juice

1 bag of arugula

Salt

In the bowl of a small blender, place the cooked lentils, cream cheese, lemon, almond puree and salt.

Set aside in a cool place for 1 hour.

Place a large slice of salmon on a pancake.

Spread cheese mixture on salmon.

Add a few arugula leaves.

Roll the crepe by first folding the 2 sides (right and left on the picture above) and then rolling.

Do the same with the other pancakes until you run out of salmon.

Cut the pancakes into sections.

Arrange the pancake makis on a plate.
