Lentils with carrots, sweet potatoes and ginger


For 4 people

- 500 g green lentil of le Puy PDO
- 4 carrots
- 2 medium sweet potatoes
- 1 c. tablespoon grated ginger
- 1 onion
- 3 garlic cloves
- 1 c. tablespoon turmeric
- ½ bunch flat-leaf parsley
- 5 c. tablespoon olive oil
- Salt

Peel and dice the carrots and sweet potatoes.
Peel and chop the onion.
Peel and chop the garlic cloves.
Chop the parsley.

Heat the olive oil in a saucepan or pot.
Add the minced onion and sauté for 2 minutes.
Add the diced carrots and sweet potatoes.
Add chopped garlic, grated fresh ginger, turmeric, salt and pepper.
Stir and sauté for 2 minutes.

Add the Lentille Verte du Puy and half the chopped parsley.
Cover all ingredients with water and simmer for 25 minutes.
Check the cooking and water levels from time to time, and if necessary, don't hesitate to add more water.

Before serving, add the remaining chopped parsley to the Lentille Verte du Puy and season to taste.
