Cook the lentils for 30 minutes in a volume of unsalted water. Rinse in cold water to stop cooking and drain.
Prepare a syrup with 50 cl of water, the sugar, the star anise, the zests, the ginger, the cinnamon and the scraped vanilla pod. Add the lentils and cook for 1h20 - 1h30 at a low boil, like a jam. Extinguish the fire.
Be careful, the lentils will continue to cook and the mixture will thicken as it cools, so don't wait until the mixture is "dry" to turn off the heat and be careful at the end of the cooking time, as the success of the recipe is in a few minutes.
Filter on contact and place in the fridge.
Place a circle in the middle of a plate and garnish with candied lentils (remove zest, cinnamon and star anise beforehand). Add a few cubes of candied orange in the middle.
Pour a few spoonfuls of custard all around and enjoy!
