Back of cod

Ingredients:

For 4 people

4 pieces of cod back
150 g sesame seeds
1/4 celeriac
6 potatoes
100g of butter
1l of milk
250 g of green lentils from Le Puy
2 carrots
1 onion
1 bouquet garni

preparation of recipe

Dice the 2 carrots. Chop the onion. Peel potatoes and celeriac. Dice the potatoes and the celery root into equal-sized cubes.
In a pressure cooker, cook the lentils in 2 times their volume of clear water (unsalted) for 10 minutes. Drain the lentils, they are not yet fully cooked. In the same pot, brown a knob of butter and the chopped onions, as well as the carrots. Add a bay leaf sauce and thyme. Cook over low heat to make the onions translucent and cook the diced carrots ... Before pouring the lentils into the casserole, add a pinch of coarse salt and cover with water. Close the casserole and leave to cook for 10 minutes after the valve whistles. Open the pan to remove the pressure, check for doneness and seasoning and set aside.
In a large saucepan, pour 1 liter of milk and 1 liter of water and a small handful of coarse salt. Dip the celeriac and potatoes. Bring to a boil and cook for about 15 minutes. With a fork, check for doneness; the celery should be tender. Pour the equivalent of a bowl of water/cooking milk before draining the potatoes and celery in a large colander.
For a very fine purée, put the diced potatoes and celery in the mixing bowl, with a little of the cooking "juice" and the equivalent of 50g of butter. Blend at high speed to make a very fine purée. Add the remaining 50g of butter, adjust the seasoning (a little salt perhaps and pepper, and why not a touch of grated nutmeg), mix again. Make a reservation.
Prepare the cod back. Cut identical pieces (to be fair). In a soup plate, pour a packet of sesame seeds (toasted or not). Roll the cod in sesame seeds on all sides.
5 minutes before serving: Heat a pan with 2 tablespoons of olive oil. Cook the cod over medium heat, adding the remaining sesame seeds to the pan. Turn them over after 5 minutes and cook for another 5 minutes. Check the cooking of 1 codfish back.
Presentation: In large plates, place 3 tablespoons of lentils, 2 tablespoons of mashed potatoes and on top of the lentils a codfish back with sesame seeds.
