Salmon tartar with lentils and passion fruit

Ingredients:

For 4 people

200 g fresh salmon (one fillet)
100 g of green lentils from Puy
3 passion fruits
1 lime
1 teaspoon ginger powder
3 tablespoons sesame oil
Salt

preparation of recipe

1. Place the lentils in a large pot of cold, unsalted water. Bring to a boil and cook for 20 to 30 minutes (taste to check). Rinse under water and set aside.
2. Remove salmon skin and bones. Cut the flesh into very small cubes and put them in a bowl. Keep in a cool place.
3. Cut the passion fruit in half and remove the flesh.
4. Remove the juice from the lemon.
5. In a bowl, combine all ingredients except salmon. Season with salt and pepper.
6. Ten minutes before serving, add the salmon and mix well and serve immediately. (We put the salmon at the last moment so that the lemon juice does not cook the salmon).
