Lentil salad

Ingredients:

For 4 people

500 grams of green lentils from Puy
2 very large onions
1 bouquet garni (thyme, bay leaf, parsley)
1 carrot
Salt
Pepper

Heat the water in a pot with 1 tablespoon of salt, the thinly sliced carrot and the bouquet garni.
Pour in the green lentils from Le Puy, cook covered for 20 minutes, checking that they are not too hard or turning into a purée.
Drain well, there should be no water left, remove the bouquet garni.
Place them in a salad bowl with the finely chopped onions, pour in the vinaigrette sauce, mix and adjust the seasoning.
