Lentil flans

Ingredients:

For 4 people

150 g of green lentils from Puy
1 zucchini
20 cl of fresh cream with soy sauce
1 onion
3 large eggs
Olive oil, salt, pepper
50 g grated Gruyere cheese (optional)
Smoked duck breast (optional)

preparation of recipe

Cook the lentils for 20 to 25 minutes. Drain well at the end of cooking.
In the meantime, chop the onion and brown it in a pan with a little olive oil. Add the grated zucchini and cook for about ten minutes. Make a reservation.
Preheat your oven to 200°. Beat the eggs into an omelette with the cream, add the cooked lentils and the vegetable mixture (onions/zucchini). Season with salt and pepper. Place your prints on a perforated baking sheet. Garnish them with the preparation. Cook for 20 minutes at 200°.
You can decorate with duck breast "chips". Place your slices of duck breast on a baking mat. Bake for about 10 minutes. Set aside on paper towels.
