Lentil and cheese balls

Ingredients:

For 4 people

200 g of green lentils
100 g of bread
100 g St Môret
2 shallots, chopped
2 tablespoons of parsley
1 teaspoon of paprika
Salt, pepper
2 egg yolks
Breadcrumbs

Cook the lentils with 2 large glasses of water for about 20 minutes. Then drain and let cool a little.
Mix the bread.
In a bowl, mix the well drained lentils, the mixed bread, the cheese, the finely chopped shallots, the parsley, the pepper, the salt and the paprika
Form balls with the help of your hands.
Prepare two soup plates, one with two beaten egg yolks and the other with breadcrumbs.
Dip a dumpling in the egg yolk and then in the breadcrumbs and continue until the dumplings are used up
Place the meatballs in a baking dish
Put a little olive oil on the meatballs
Bake for 15 minutes at 200° (until they are lightly browned)
Serve hot with a white cheese sauce, a little lemon, salt, pepper, chives and paprika.
