With the benefit of a micro-climate and inimitable know-how developed in the Velay for more than 2,000 years, the Green PUY Lentil is enjoyed by young and old alike.

1979 : Creation of the CILVERPUY interprofession to "save" the Green PUY Lentil
1996 : The Green PUY Lentil enters the very closed circle of the A.O.C.
2000 : Year of record production with 83,000 quintals
